Sweet Cherry Tomato & Sausage Bake

The ultimate one-tray comfort food with its’s bold use of herbs and intense tomato sauce.

If you would ask me what is my favourite recipe to not only make but enjoy with friends and family, it will definitely be Jamie Oliver’s Sweet Cherry Tomato & Sausage Bake. If you need to impress the in-laws, look no further, as this dish will have them talking about your culinary skills for days.

You cannot mess this up. I half the ingredients when it’s only for two. Sometimes I don’t have fresh rosemary, thyme of bay leaves, so I use dried. The flavours are still amazing.

But if you need to go all out, make it as per the recipe, add sliced bread, or my favourite, creamy potato mash. For the carb conscious, it goes really well with mashed cauliflower, a green salad and a nice glass of wine.

Ingredients

  • 2 kg Ripe cherry tomatoes Mixed colours if you can find them.
  • 2 sprigs Fresh Thyme
  • 2 sprigs Fresh Rosemary
  • 2 sprigs Fresh Bay
  • 1 tbsp Dried Oregano
  • 3 Cloves Garlic Peeled & chopped
  • 12 Pork Sausages
  • Extra virgin olive oil
  • Balsamic Vinegar
  • Sea Salt
  • Freshly ground black pepper

Instructions

  • Preheat the oven to 190C/375F/gas5.
  • Get a large enough roasting tray to take the tomatoes in one snug-fitting layer.
  • Put in all your tomatoes, the herb sprigs, oregano, garlic and sausages.

  • Drizzle well with extra virgin olive oil and balsamic vinegar and season with salt & pepper.
  • Toss together, then make sure the sausages are on top and pop the tray into the oven for 30 min.

  • After this time, give it a shake and turn the sausages over.  Put back into the oven for 15 to 30 minutes, depending on how golden and sticky you like your sausages.
  • Once cooked, you’ll have an intense, tomatoey sauce. If it is a little too thin, lift out the sausages and place the tray on the hob to cook it down to the consistency you like.
  • Serve with bread, mashed potato, mashed cauliflower, rice or polenta or a green salad and nice glass of wine.
